Tasmanian Scallop Pie

Virtually unheard of on the mainland, scallop pies are available in cafes, markets and food stalls right across Tasmania. Tradition has it that these yummy morsels originated in the early 1800s when scallops were sold for a shilling a bucket on the wharves of Hobart. The dash of curry in the creamy sauce is said to have been added by the waterfront pubs that baked the pies to make their patrons a little more thirsty. Freycinet Marine Farm

Freycinet Marine Farm's cool, clean water forms its foundation. As the venue's only surroundings are forests, vineyards and farms, the water is pure. So too, then, is the produce. You can taste the clean, pure waters of Tasmania's east coast with every oyster that passes your lips. The farm's sales room sells its produce direct from the ocean to you, either fresh or cooked in delicious flavors. Enjoy Tasmania's freshest seafood on-deck or taken home, with oysters and mussels harvested daily, and scallops, abalone, rock lobster, urchin and salmon sourced from local fishermen. They also sell local wines from the region. The farm offers land-based tours that include a live oyster display and an oyster shucking demonstration, as well as the opportunity to taste Tasmania's finest seafood.


Norfolk Bay Smoked Mussels

Tasmanian Smoked Mussels are hot smoked in native Tasmanian Oak smoke ovens by Norfolk Bay Gourmet Seafoods, Sorell. A must for entertainer's platters or seafood salad, the mussels are gluten-free and organically grown, and there are no preservatives or artificial flavours. They come in 170g packs (with sauce), 140g packs (dry spice) and 1 kg catering size bags - all cryovaced.


Ashmore Hot Smoked Trout

Ashmore Foods Tasmania has its own smoker on site which allows us to produce in small batches which ensures quality control. These have proven very popular with Tasmanian customers and are now also being made available to customers Australia wide. Tasmanian trout, salmon and mussels are used in Ashmore recipes to make Traditional, Cajun and Thai smoked varieties (salmon) as well as a cold smoked variety. All products are sent chilled and iced in thermally insulated packages via overnight couriers.

Blue Eye Trevalla

Blue Eye Trevalla is Tasmania's favourite fish. Caught on the east coast, out of ports in Bicheno and St Helens, blue eye is available consistently to local buyers. Not to be confused with the trevally or warehou family of fish, blue eye is a deep, cold water species which has a more delicate flavour than its cousin, the trevally. Particularly good for battering or crumbing, blue eye has a firm flesh and a moist and tender mouth feel. Use it also for grilling and baking.

Woodbridge Smokehouse Cold Smoked Salmon

Woodbridge Smokehouse produces some of the most mouth-watering and luxuriant smoked Ocean Trout and Atlantic Salmon available today - anywhere in the world. Situated on the verdant south-east coast of Tasmania, Woodbridge Smokehouse is set in an organic apple orchard. Traditional hand-smoking processes using their own fruit tree wood create the delicate and distinctive flavours. Ocean trout is sourced from Macquarie Harbour, on the rugged west coast of Tasmania. Their Atlantic salmon comes from the Huon Valley, in Tasmania's cool south-east region. The product range includes sliced and unslices, cold and hot smokes salmon and trout.
