41 degrees South Tasmania grows and develops products for both Korean and American ginseng. It has many traditional Chinese medicinal applications such as a nourishing stimulant, immune booster, muscle relaxant and is also used in the treatment of type II diabetes and stress. 41 degrees South Ginseng spice blend contains a mix of spices including Panax ginseng and Tasmanian Mountain Pepper. Tamar Valley Truffles

In the heart of the Tamar Valley food and wine region is a farm with some 3000 oak trees. Here, overlooking Lake Trevallyn, Tamar Valley Truffles has grown a worldwide reputation for quality truffles. Just 15 minutes from Launceston, the family-owned business was established in 2001 and today uses an innovative computer system to monitor every single tree. As a result, the eight-hectare property is one of the most productive tuffieres in the country. Tamar Valley Truffles has a range of specialty products. From Tasmanian truffled butter, to tomato and truffle sugo, truffled risotto, truffled olive oil and truffled sea salt, there's an offering for every truffle lover. Not enough options? Hawthorne Paste

At Hawthorne Hill Farm, we grow and make seriously delicious food. When we discovered the Hawthorne plant, our products were born and our business began soon after. Our first and flagship product is our Tasmanian Hawthorne Paste. It is similar in use to fig or quince paste but has its own unique wild zingy flavour. It partners perfectly with cheeses and meats and can form the basis of a very special jus or glaze. It is available in Original and Sugar Free recipes.

Our Sugar Free range of products uses pharmaceutical grade xylitol to replace cane sugar. This makes them ideal for diabetics and those who are trying to take sugar and carbs out of their diet. Xylitol is a great, all natural sweetener that is sourced from birch trees our corn cobs. We use the corn cob variety because it suits our recipes very well and is a sustainably sourced product.


Truffles of Tasmania

Our truffles are grown in the pristine Tasmanian environment where we have the cleanest air in the world. This environment is ideal for the production of the black truffle and the quality of the truffles is second to none in Australia. Preferred by many chefs across the globe as a premium product. We have cold crisp winter nights with heavy morning frosts with summer long days and beautiful mild warm temperatures giving us a extended growing season and plenty of time to mature the truffles aroma and taste. The season runs from late May until mid to late August.

Shima Wasabi

Shima Wasabi is the largest commercial wasabi farm in Australia. Located in Tasmania's temperate northwest and founded by Stephen Welsh, Shima Wasabi utilises a unique hydroponic growing system that enables a controlled growing environment. Almost all parts of the plant are edible, with the stems being harvested and cleaned before packing to send direct to restaurants around Australia for grating and mixing to make fresh wasabi paste. Glen Morey Estate Olive Oil

A producer of award winning cool climate Extra Virgin Olive Oil. Glen Morey is a family farming operation at Woodbury in the Tasmanian Midlands. The farm grows Corriedale sheep (hence the label) as well as broadacre crops. We diversified into olive growing with the first trees planted 2003 - 1500 trees on 5 Ha. Currently grown using organic farming principles (not certified). There have been no artificial fertilisers or chemicals applied to this grove in last five years. We have no intention to certify as organic however we will continue to use organic farming principles as much as possible and is practical.
